Crispheart Antipasto Salad with Italian Vinaigrette
Serves: 6
INGREDIENTS
Vinaigrette
1/2 c olive oil
1/4 c red wine vinegar
1 T mayonnaise
1 T sugar
1 1/2 t kosher salt
1 t dried oregano
1 garlic clove, finely grated
Salad
1 head Crispheart lettuce, coarsely chopped
1 small head radicchio, coarsely chopped
2 small persian cucumbers, sliced into half moons
1 can garbanzo beans, drained
1/2 c chopped peperoncinis
3 oz salami, cut into cubes
8 oz small fresh mozzarella balls, torn
1 c pitted castelvetrano olives, halved
fresh oregano to garnish
Preparation
First, make the vinaigrette. Combine all ingredients in a small bowl and whisk until blended and creamy. To build the salad, combine all the ingredients in a large bowl. Toss with vinaigrette and garnish with fresh oregano leaves.
