Shaved Celery Salad
Serves: 4
INGREDIENTS
Vinaigrette
juice of one lemon
2 anchovies, chopped and smashed to a fine paste
1 garlic clove, minced
1/2 t kosher salt
1/2 t honey
1/4 c olive oil
Salad
3 large celery stalks
1 pink lady apple
4 red radishes
1 fennel bulb
2 oz blue cheese
flaky salt
Preparation
Make vinaigrette. Combine the first 4 ingredients in a small bowl and whisk to blend. Let sit for 5 minutes, then whisk in honey and olive oil. Set aside.
With a mandoline or sharp knife, thinly slice the celery, apple, radishes, and fennel bulb. Place in a medium bowl and drizzle vinaigrette over, tossing lightly. Top with blue cheese and a sprinkle of flaky salt.
